A Macaron Emporium In Calgary

Ollia Macarons and Tea has been making Calgary’s Mount Royal village a bit more Parisian since 2014. The place is run by husband-and-wife team David and Lindsay Rousseau, who decided to return to Calgary and open the shop after years of living overseas in Europe. David grew up in France, inheriting his baking prowess—and locally minded methods—from his mother and grandmother. Now, the pair peddles over 20 flavours of light-as-air macarons made totally from ethically sourced ingredients.

Their savoury flavours—like fig and balsamic and blue cheese, pear and pecan—are especially drool-worthy (as is the champagne and cotton candy, of course). For weddings, the shop can stock your sweet table with a kaleidoscopic range of custom colours, sky-high towers and giant macaron cakes (wholesale prices start at $2 per macaron), or you can learn to make your own at one of their Macaron 101 workshops.
