Kensington Palace has just announced Prince Harry and Meghan Markle’s cake designer. American-born Claire Ptak, owner of London-based Violet Bakery Cafe, has been commissioned to create a lemon elderflower cake topped with fresh flowers.

When it comes to the choice in cake designer, Alexandria Murray of Finespun Cakes agrees the couple couldn’t have picked a more perfect person. “Having a California-raised cake designer focusing on local and fresh British ingredients couldn’t be any more perfect, and almost seems symbolic for Meghan Markle and Prince Harry’s wedding,” Murray says.

The Palace also said the cake will incorporate the “bright flavours of spring.” Nadia Colella of Nadia & Co. suggests that this means the couple is eyeing more “light” flavours, including tea flavours such as Earl Grey and peach oolong. “I’m a huge fan of citrus paired with floral notes, like what Prince Harry and Meghan have chosen,” Colella says. “I think their choice is bright, fresh and very much on-trend.”

We’ve seen blooms and greenery adorn cakes for years (in fact, flower-topped cakes were first seen in the 19th century), and this is one style of wedding cake that isn’t going anywhere anytime soon. The elegance of incorporating, real, fresh flowers for a simple yet stunning cake is a trend that will continue, and having Prince Harry and Meghan Markle’s wedding cake follow this trend basically guarantees that we’ll see more of it for years to come. “I think people will always love this style, because there’s an endless variety of flowers you can put on a cake,” Murray says.

Both Colella and Murray think the couple’s cake will have a more contemporary feel. “I’m envisioning a classic meets modern cake,” Murray says. “For the classic part: clean lines and elegant colours. For the modern part, I think Claire Ptak will add some beautiful textured buttercream and apply the flowers in a loose and whimsical way with lots of movement.”
