They are a great way to incorporate the metallic trend and when the light reflects off the hand-painted dots they create a sparkling effect. The sugar flowers add a touch of colour and soften the look. This is a design that would work well for a wide variety of weddings, but would be particularly well-suited to a formal evening wedding. The flowers are handmade gum paste flowers that were then hand-painted. Natalie Portman wears this amazing white dress with tiny petal blossoms in an ombre colour pattern from the bottom coming up to the top. The colour palette for the cake (white and silver with various shades of purple and pink) came directly from that dress and a floral arrangement used in another ad for the fragrance. This style is perfect for the couple looking for a romantic cake with a bit of a modern flair. The bottom tier features multi-coloured fondant ruffles in an ombre pattern, followed by the popular silver metallic look. The extended middle tier is wrapped with satin ribbon in a modern crisscross pattern. For this, I chose peach ombré and green colours. The black pearls add a touch of elegance to the cake, especially since they are rare and expensive in real life. In the ocean, pearls come in all different sizes, which is why I played with this variation on the cake. The flowers and fan are made of fondant and royal icing. - <strong>Cake by <a href="https://www.facebook.com/sugarbloomsandcakes" target="_blank">Sugar Blooms and Cakes by Genevieve</a> in Winnipeg</strong><br /> <br /> <strong>From the designer:</strong> "The inspiration of this cake came from Barong Tagalog fabric – a traditional, embroidered material from the Philippines. It is worn for big occasions of celebration such as weddings. We wanted to capture the simplistic beauty of the fabric and highlight the elegance of the embroidery and showcase a wedding cake that represents our Filipino roots. We used Rosals, a Filipino flower, similar to an open rose, and cake toppers portraying a couple dressed in traditional Filipino garments. The type of bride that would best suite this wedding cake would be one who may not have grown up in the Philippines, but holds her Filipino heritage close to her heart. She is a bride who wants something different for her wedding cake, and not the usual cake trends that we tend to see during the wedding season. The three tiers are all covered in fondant. The middle tier has an additional covering of edible wafer paper. Royal icing and gum paste were used for the embroidery details, and painted with gold edible paint. We’re bringing the two together. The golds come from our love of gold jewellery and the chevron details add a modern touch. The bright colours of the handmade gum paste flowers bring a whimsical element to this elegant cake. - <strong>Cake by <a href="http://www.whiskcakes.com/" target="_blank">Whisk Cake Company</a> in Kelowna, British Columbia</strong><br /> <br /> <strong>From the designer:</strong> "We wanted to do something a little different, something that catches your eye and causes it to move from top to bottom, without it being too overwhelming. The flow of fabric and water always have a tendency to move the same way–breathlessly–so we wanted to try to mimic that movement with something that does not move like that at all–sugar. This five-tier wedding cake was covered in a pale pink fondant as our canvas, before adding multiple colours of pleated fondant in different directions on each tier. Once the cake was completed, we started work on our favourite part of any wedding cake–the sugar flowers. Working with the different shades of pinks and ivories, we set out to create beautiful, realistic-looking flowers that would pop against the subtle colours of the cake. Bright pink tulips and peonies contrast the subtle, smooth white freesias that were placed on the cake, adding movement and depth. This cake could be for a modern or vintage wedding. The lines in this cake lend well to all different styles, making it timeless. I wanted to convey the opulence of the palace with the silver leaves and handmade sugar lace used on the bottom tier as well as the lush bounty of the gardens in the cascade of flowers. This fondant-covered cake features hand-painted sugar paste flowers and leaves including parrot tulips, peonies, freesias, roses and sweet peas. We have been in business for 57 years. I am the third generation owner, trying to bring my personal touch to the traditional bakery. The cake has many vintage elements incorporated into a modern design. This cake is for a bride that still enjoys the traditional aspects of a wedding cake but wants to add a contemporary and personal flair. The cake was covered in different shades of coral fondant from light to dark to incorporate the ombre look that is becoming more and more popular. I used royal icing to pipe on the traditional swags and scrolling of a wedding cake. With a change in colours, this cake could also apply to a romantic, whimsical, or shabby-chic wedding. Many herbs have symbolic meanings that go back centuries, even millennia. Lavender represents love, happiness and peace; sage represents a long life, wisdom and longevity; thyme represents health and courage. The cake is covered with fondant, creating a canvas for Chef Daniel to artistically design the a couple's perfect garden on each tier. The Elizabethan scrolling dating back to the 16th century is then applied in white chocolate. We wanted the overall look to encompass chic, vintage, luxurious and metallic elements. The cake would be perfectly matched with a bride who is looking for a contemporary design with a touch of antiquity. This cake would work equally well in a clean modern urban setting or a more lavish old-world hotel. Our design entails a porcelain smooth white fondant finish adorned with handmade silver sugar flowers reminiscent of antique jeweled brooches and hand-painted organic filigree pattern in tones of grey. Underneath it all lies five layers of cake and four layers of filling created from all-natural ingredients. The cream puffs are held together by a hard caramel and delicately spun sugar that wraps the whole dessert, making it beautifully elegant. This cake is best suited for a bride that might be looking for something a bit non-traditional in North America. Although guests are sometimes intimidated to break off a piece, once someone starts, everyone really gets into it and it disappears quickly. The main decoration is spun sugar with a simple ribbon at the bottom. With broach bouquets and vintage decor being such a popular trend right now, we focused on a modern vintage-themed cake. This cake could appeal to a wide variety of brides, especially someone who appreciates vintage styles, but wants something with a modern twist. The oval features at the bottom are all hand-cut from gumpaste. The broaches are from personal collections and others are store-bought. We built around the theme with layers of fondant and gumpaste. There really was not an exact design for this because we decided to just build around the broaches. It looked a bit scattered when all of the pieces were laying out, but as soon as we started placing them on the cake, it all made sense.
